Shrimp Tacos with Salsa

Ingredients

  • 1 Mango
  • 1 baby romaine lettuce
  • 1 Red Onion
  • 150 g red cabbage
  • 200 g shrimp
  • 4 tbsp olive oil
  • 1 Lime (juice)
  • a pinch chili powder
  • a pinch ground coriander
  • Salt
  • Pepper
  • 4 tbsp chopped cilantro leaves
  • 4 soft shell tacos (or tortillas)

Instructions

    Peel the mango with a vegetable peeler, remove the flesh from the pit and dice it small. Wash, trim, dry and shred the lettuce into strips. Peel and dice the onion. Separate the outer leaves of the cabbage and slice or shave into thin strips. Rinse the shrimp and pat dry. Heat oil in a grill pan and cook the shrimp for 2-3 minutes. Drizzle with lime juice and season with chili, coriander, salt and pepper. Remove and mix with lettuce, mango, onion and cabbage. Fold in cilantro leaves and finish the salsa with remaining lime juice.

    Wipe the pan with kitchen paper and toast each taco for about 1 minute until warm. Fill with the salsa mixture and serve.
