Ingredients

  • 1 Red Onion
  • 4 cod fillets (about 150 g each)
  • Lemon juice
  • 500 g kohlrabi
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 125 ml Vegetable broth
  • 125 g heavy cream
  • 1 tbsp yellow mustard seeds
  • 2 tbsp clarified butter
  • oil for frying
  • 2 sprigs dill

Instructions

    Peel the red onion and cut into thin rings. Drizzle the fish fillets with lemon juice and let sit for about 5 minutes.

    Peel the kohlrabi and cut into 4 cm long, narrow sticks. Peel a shallot and finely mince it. Sauté in butter until translucent, add the kohlrabi and cook until slightly softened, season with salt, pepper, and nutmeg. Pour in broth and cream and simmer until al dente.

    Meanwhile crush the mustard seeds coarsely in a mortar, mix with salt and a pinch of pepper. Pat the fish dry and season with the mustard mixture. Heat the clarified butter and sear the fish until golden yellow on one side, flip and brown the other side.

    Fry the onion rings in hot oil for 2 minutes, remove and drain on paper towels.

    Wash the dill, shake off excess water, and roughly chop. Sprinkle over the kohlrabi vegetables and arrange the fried cod fillets on top. Garnish with the fried onion rings.
