Ingredients

  • 125 g whipping cream
  • 40 g Butter
  • 40 g fruit sugar
  • 225 g milk chocolate couverture
  • 50 praline hollow spheres (from chocolate)
  • sugar pearls

Instructions

    Bring cream with butter and fruit sugar to a quick boil while stirring. Add finely chopped couverture into the mixture, melting it under continuous stirring. Let the mass sit at room temperature overnight.

    Fill a piping bag fitted with a medium star tip with the chocolate-cream mixture and pipe into praline hollow molds. Garnish with sugar pearls and place in praline sleeves. Store the truffles in a cool place.
