Sagopudding mit Maracuja

Ingredients
- 100 g sago
- 75 g brown sugar
- 250 ml coconut milk
- 1 pinch salt
- 6 passionfruits
- coconut flakes (for garnish)

Place the sago in a bowl and cover with cold water. Let it soak for about 1 hour. Drain, let it drip, then transfer to a pot. Add enough water to cover the sago and bring to a boil. Simmer on low heat for about 10 minutes until the sago pearls become translucent. Then strain through a sieve and rinse with cold water.

Combine sugar with 200 ml coconut milk and salt in a pot, stirring until the sugar dissolves. Add the sago, mix well, and let everything cool. Pour into four small glasses and refrigerate for at least 2 hours.

Halve the passionfruits and scoop out the pulp. Serve the puddings on plates, drizzle with passionfruit pulp and remaining coconut milk. Garnish with grated coconut flesh and serve.
