Sago Cream with Jackfruit

Ingredients
- 300 g jackfruit (in syrup, canned)
- 50 g sago
- 3 tbsp sugar
- 1 lime (juice and fine zest strips)
- Salt
- 100 ml sweetened coconut milk (canned)
- 1 tbsp Cornstarch

Drain the jackfruit pieces in a sieve, catch the liquid, measure it, and add an equal amount of water.

Bring the diluted juice to a boil, stir in the sago pearls, and simmer gently for about 10 minutes. Then mix in sugar, lime juice and zest, and a pinch of salt. Simmer for another 5 minutes over low heat. Slice the jackfruit lengthwise into strips and fold them into the sago mixture. Pour the dessert into four glasses.

Bring the coconut milk to a boil. Whisk the cornstarch with 2 tablespoons water until smooth, then stir it into the coconut milk, bring to a boil, and let thicken. Pour the sauce over the desserts and chill.
