Creamy Orange Pudding

Ingredients
- 6 sheets white gelatin
- 300 ml whipping cream
- 200 ml milk
- 40 g sugar
- 1 Vanilla bean
- 1 untreated orange
- 1 tbsp honey
- mint (for garnish)

Soak the gelatin in cold water. Bring the cream, milk, sugar and split vanilla bean to a gentle boil. Simmer quietly for about 10 minutes. Remove from heat and discard the vanilla bean. Squeeze out excess liquid from the gelatin and stir it into the warm cream until dissolved. Pour the mixture into four small glasses. Let cool, then cover and refrigerate for at least 4 hours until set.

Wash the orange hot, dry it, and zest its peel. Then peel around the entire fruit with a sharp knife to remove all white pith. Cut out the segments between the membranes. Squeeze the juice from the remaining fruit and mix the orange segments and zest in a bowl. Fold in the honey.
