Turnip Bites in Tempura Batter with Salsa

- 6 tomatoes
- 1 red chili pepper
- 1 Shallot
- 2 tbsp freshly chopped coriander leaves
- 2 tbsp sesame oil
- 1 tbsp Lemon Juice
- 1 tsp brown sugar
- salt to taste
- 800 g turnip
- 1 egg
- 2 tbsp Soy sauce
- 0.5 tsp Curry Powder
- 150 g flour
- 1 tsp Baking powder
- peanut oil for frying

For the salsa, blanch the tomatoes, cool them, peel, quarter, seed and dice. Wash the chili pepper, halve it, clean it and finely chop. Peel and finely chop the shallot. Mix the chili, tomatoes, coriander and oil together. Season with lemon juice, sugar and salt.

Wash and peel the turnip, cut off about 4-5 cm of the green tops. Slice the turnips lengthwise into approximately 1 cm thick rounds. For the batter whisk the egg with soy sauce, curry powder and about 200 ml ice‑cold water. Quickly fold in the flour and baking powder until a thick batter forms. Dip portions of the turnip slices into the batter, let them drain and fry in hot oil (about 170 °C) for 3–4 minutes until golden brown. Drain on kitchen paper and serve with salsa.
