Ingredients
- 3 finely chopped shallots
- 1 tsp saffron strands
- 0.125 l white wine
- 0.25 l poultry stock (or fish stock)
- 3 tbsp quark
- 1 egg yolk
- Salt
- Pepper
- Lemon juice
Instructions

Reduce white wine with shallots and saffron strands. Add poultry or fish stock and simmer until reduced.

Strain through a sieve. Mix quark with egg yolk, add to the sauce and whisk vigorously. Season with salt, pepper, and lemon juice.
