Saffron Rolls

Ingredients
- 500 g flour
- 225 ml milk
- 1 cube fresh yeast (42 g)
- 75 g butter
- 75 g sugar
- 1 tsp ground saffron
- 2 Eggs
- 1 egg yolk (for brushing)
- 2 tbsp raisins
- 2 tbsp powdered sugar

Preheat the oven to 180 °C with fan and top/bottom heat. Line a baking tray with parchment paper. Sift the flour into a bowl and make a well in the center. Warm the milk, crumble the yeast into it and dissolve. Pour the yeast‑milk mixture, butter, sugar and saffron into the flour well and knead with the eggs until smooth. Dust the dough with a little flour, cover with a kitchen towel and let rise in a warm place for 1 hour until doubled.

Divide the dough into four equal parts, roll each part into 2 cm thick strands and cut into 10 cm pieces. Roll each piece into an S‑shaped coil. Place the coils on the prepared tray. Brush with beaten egg yolk and sprinkle with raisins and powdered sugar. Bake in the preheated oven for 25–30 minutes until golden yellow (do a toothpick test!).
