Ingredients
- 1 untreated lemon
- 150 ml sweet red wine (or port)
- 50 g sugar
- 4 ripe peaches
- 1 pinch saffron strands
- 150 ml whipping cream (min 30%)
- 1 tbsp chopped mint
- mint sprigs for garnish

Wash the lemon hot, dry it, peel a thin strip of zest and cut into fine ribbons. Squeeze the lemon to extract juice. Blanch the peaches in boiling water, shock them, peel, halve and remove pits.

Bring the wine with the lemon juice and zest, sugar, saffron and 250 ml water to a boil, add the peaches, bring to another boil, remove from heat and let cool.

Before serving beat the cream until creamy, fold in chopped mint. Distribute the peaches with the compote into bowls and serve garnished with mint.
