Cream Pudding with Thyme Sauce

- vanilla aroma
- 50 g sugar
- 500 ml whipping cream
- 5 sheets white gelatin
- 200 g sugar
- 1 bundle thyme
- thyme blossoms (for garnish)

For the panna cotta, bring the vanilla aroma with the sugar and cream to a boil in a pot.

Soak the gelatin in cold water. Remove the cream from heat, squeeze out excess water from the gelatin, and dissolve it in the hot cream. Pour the mixture into four small pudding molds lined with plastic wrap and let set in the refrigerator for 4 hours.

In the meantime, bring the sugar with 500 ml water to a boil in a pot and simmer for about 10 minutes. Rinse the thyme, shake dry, place it in the hot syrup and let cool overnight. Strain the syrup, pour the panna cotta onto dessert plates, drizzle with syrup, and garnish with thyme blossoms.
