Creamy Calendula Parfait

Ingredients
- 1 egg
- 2 yolks
- 100 g sugar
- 0.5 tsp grated untreated orange zest
- vanilla pods
- 2 tbsp Amaretto
- 1 tbsp white rum
- 2 tbsp lemon juice
- 1 calendula flower
- 500 g whipping cream

Beat the egg and yolks with an electric mixer until frothy.

Add 50 ml cold water to a saucepan, stir in sugar, bring to a boil and simmer for about 1 minute.

Immediately whisk the hot sugar syrup into the egg mixture. Stir in orange zest and vanilla bean seeds, then chill the batter over an ice bath (with ice cubes).

Fold Amaretto and rum into the chilled parfait base. Remove petals from the calendula flower and fold them with lemon juice into the mixture.

Whip the cream to stiff peaks and fold it into the parfait base. Transfer the mixture to a bowl or pudding mold and freeze for 3–4 hours until firm. To serve, pour out of the mold after briefly placing it in hot water. Garnish with fresh calendula petals if desired.
