Ingredients

  • 500 g macaroni
  • Salt
  • 200 g Gorgonzola
  • 2 cloves garlic
  • 2 tbsp butter
  • 1 tbsp flour
  • 400 ml milk
  • pepper (ground)
  • nutmeg
  • 1 pinch ground saffron
  • 100 ml whipped cream (at least 30% fat content)
  • parsley (for garnish)

Instructions

    Cook the pasta in boiling salted water until al dente. Drain and set aside.

    In a saucepan, melt butter over medium heat. Add minced garlic and sauté until translucent. Sprinkle flour, stir to form a roux, then gradually whisk in milk, cooking until thickened.

    Add Gorgonzola to the sauce, stirring gently over low heat until melted and smooth. Season with salt, pepper, nutmeg, and saffron.

    Simmer the sauce on a gentle flame for 5 minutes, stirring occasionally to prevent scorching.
