Ingredients

  • 1 kg fresh saffron mushrooms
  • 1 untreated lemon
  • 2 Garlic cloves
  • 1 tbsp rosemary
  • 1 tsp thyme
  • 2 Bay leaves
  • 500 ml olive oil

    Clean the mushrooms and cut them smaller if needed.

    Rinse the lemon hot, pat dry and zest. Squeeze out the juice. Peel the garlic and slice thinly.

    Heat 2 tbsp oil in a pan and sauté the mushrooms until the liquid evaporates. Mix the mushrooms with lemon zest, rosemary, thyme, bay leaves and 1 tbsp lemon juice, season with salt and pepper, and transfer to jars. Top with enough olive oil to cover everything, cool and store dark and cold.
