Marinated Mushrooms

Ingredients

  • 800 g mixed mushrooms (e.g., button, oyster, chanterelle)
  • 4 tbsp olive oil
  • 2 cloves garlic
  • 2 tsp chopped thyme
  • 4 tbsp white wine vinegar
  • 4 tsp balsamic vinegar
  • Salt
  • Pepper
  • 1 bunch parsley

Instructions

    Clean and rub the mushrooms. Depending on size leave whole or chop. Heat 2 tbsp olive oil in a non-stick pan and sauté the mushrooms, stirring constantly over medium heat for 5 minutes. Peel and press the garlic into the pan. Season the mushrooms with thyme. Mix vinegar, salt, pepper and remaining oil. Stir in the mushrooms and cover; let marinate for 4–5 hours or preferably overnight.

    Rinse the parsley and shake dry. Remove leaves, chop finely and sprinkle over the arranged mushrooms.
