Ingredients

  • 300 g fresh chanterelles
  • 3 Stalks Parsley
  • 2 tbsp olive oil
  • Salt
  • pepper (ground)
  • 8 slices sandwich bread
  • 8 slices cheese

Instructions

    Clean the mushrooms and cut them into small pieces if desired. Wash, dry, shake off excess water from the parsley, pick off leaves and roughly chop.

    Heat the oil in a pan and sauté the mushrooms for 3-5 minutes until browned. Season with salt and pepper, stir in the parsley, then remove from heat.

    Spread one slice of cheese on half of the sandwich slices, top with the cooked mushrooms, add another slice of cheese, and close with a final bread slice. Press firmly and grill for 6-8 minutes, flipping halfway through. Slice the finished sandwiches diagonally and serve in paper bags.
