Ingredients
- 1 untreated orange
- 1 untreated lemon
- 300 g dried fruit (e.g., apples, dates, plums, apricots, figs)
- 1 pinch Ground cinnamon
- 1 pinch ground cardamom
- 2 tbsp liquid honey
- 1 sachet saffron strands (0.1 g)
- 300 g instant couscous
- 300 g plain yogurt
- 100 g Sour cream
- 3 tbsp sugar
- ras el-hanout
Instructions

Wash the orange and lemon with hot water, pat dry, grate the zest and squeeze out the juice.

Cut the fruits into small pieces, mix with zest, juice, spices, and honey; heat in a pot, remove from heat and let steep for 1 hour.

Meanwhile bring 400 ml water with saffron to a boil in a pot. Place couscous in a bowl, pour saffron water over it and allow to absorb for about 10 minutes.

In the meantime whisk yogurt with sour cream and sugar, season with salt and Ras el-Hanout.

Distribute couscous on plates, arrange fruits on top and serve with the yogurt sauce.
