Fruit Salad with Vanilla Syrup

Ingredients
- 1 honeydew melon
- 1 baby pineapple
- 2 oranges
- 100 g Strawberries
- 100 g physalis
- 2 Vanilla Beans
- 80 g sugar
- 1 pinch salt
- 2 tbsp lemon juice

Halve the melon, remove seeds, and use a small melon baller to scoop out the flesh; set aside. Scoop out the remaining flesh with a spoon.

Peel the pineapple thoroughly and cut the fruit into small pieces.

Shave off all white pith from the oranges using a sharp knife, then slice along the membranes to create clean fillets, catch the juice, and squeeze any leftover pulp by hand. Wash, trim, and quarter the strawberries. Separate the physalis shells and wash; set aside some for garnish and cut the rest into slices.

Fill a bowl with the fruit and mix in the orange juice.

Split the vanilla beans, scrape out the seeds, and combine both with about 200 ml water, salt, and lemon juice. Bring to a vigorous boil over high heat for about 5 minutes. Pour the hot syrup over the fruits along with the vanilla bean, then chill for about 1 hour.

Serve as desired in melon halves or on a plate.
