Ingredients

  • 100 ml milk
  • 0.5 Vanilla bean
  • 3 egg yolks
  • 60 g sugar
  • 500 ml whipping cream
  • 2 peaches
  • 50 g blackberries
  • 150 g rum fruit puree
  • eiswaffle

Instructions

    Halve the vanilla bean lengthwise and scrape out the seeds. Heat the bean with the milk and seeds. Whisk egg yolks and sugar in a bowl. Remove the bean from the milk and stir the hot milk into the egg mixture. Beat over a double boiler until creamy. Cool while stirring.

    Let the rum fruit puree drain slightly and finely chop. Whip the cream stiffly and fold in the chopped fruits with the cream.

    Pour into a metal container and freeze for 3 hours.

    Score peaches, rinse with hot water, peel, and cut into wedges. Wash blackberries and pat dry.

    Scoop the ice with an ice scoop and garnish with peach wedges, blackberries, and waffle pieces.
