Rucola and Cucumber Smoothie

The Rucola and cucumber smoothie from Spoonsparrow is especially refreshing on warmer days and packs plenty of nutrients!
Ingredients
- 1 large cucumber
- 40 g arugula
- 200 g yogurt
- 400 ml kefir
- 1 tbsp Lemon Juice
- Sea salt
- ground pepper

Wash the cucumber, trim the ends and cut it into four long slices with a vegetable peeler. Peel the remaining part and dice it. Freeze for about 30 minutes. Thread the cucumber strips onto wooden skewers to use as garnish.

Wash and dry the arugula, then roughly chop it. Blend the cucumber, arugula, yogurt, some kefir, and lemon juice until smooth. Add the remaining kefir and blend until the smoothie is thick‑creamy. Season with salt and pepper, pour into four glasses, top with the cucumber skewers, and serve.
