Ingredients

  • 16 stalks green asparagus
  • 5 sprigs rosemary
  • 1 lemon (juiced)
  • 1 tbsp butter
  • 1 tsp sugar
  • 4 tbsp mustard oil

Instructions

    Bring 1-2 l water to a boil in a large pot with 4 sprigs rosemary, lemon juice, butter and sugar. Wash the asparagus, trim off woody ends. Carefully halve each stalk lengthwise. Blanch the asparagus for 2-4 min in boiling water, remove and drain.

    Tear one sprig of rosemary, warm it slowly in a pan with the oil and toss the asparagus gently to coat. Plate on bowls or plates, serve with potatoes or white bread.
