Ingredients

  • 2 kg rosehips
  • 1 untreated lemon (zest)
  • 1 kg gelatin sugar (2:1)
  • 60 ml rum (or non-alcoholic rum)

Instructions

    Wash the rosehips, remove stems and flowers, cut in half and discard seeds.

    Add them with 1.2 l water and the lemon zest to a pot and simmer gently for about 45 minutes.

    Strain through a sieve, stir in the sugar and rum, bring to a boil, then simmer for about 4 minutes; test setting and fill prepared jars.

    Seal tightly, leave standing upright for 10 minutes, flip over and let cool completely. Store in a cool dark place.
