Ingredients

  • 4 egg whites
  • 2 tsp lemon juice
  • 250 g superfine sugar
  • 200 g ground almonds (peeled)
  • red food coloring (optional)
  • 300 g cream cheese
  • 2 tbsp powdered sugar
  • 2 tbsp raspberry syrup
  • 1 tsp rose water

Instructions

    Preheat the oven to 150°C (Oven + fan). Beat the egg whites with lemon juice until very stiff peaks form, then gradually fold in the superfine sugar. Continue beating until a glossy, firm batter forms and gently fold in the ground almonds. Color the batter with red food coloring if desired, then pipe small half‑balls (~2 cm diameter) onto parchment paper using a large round tip. Bake for about 40 minutes, leaving the oven door slightly ajar.

    Meanwhile, whisk together cream cheese, powdered sugar, raspberry syrup and rose water until smooth to make the filling. Remove the macarons from the oven and let them cool on the tray. Spread the filling over half of the macarons, top with the remaining ones, press lightly and serve.
