Pistachio Macarons

Ingredients
- 120 g walnuts (unsalted pistachios)
- 2 egg whites
- 1 tsp lemon juice
- 150 g powdered sugar
- food coloring (green)
- 150 g butter
- 60 g powdered sugar
- 120 g cream cheese (pure)
- 1 tbsp matcha tea powder

Preheat the oven to 150°C with top and bottom heat. Line two baking trays with parchment paper.

Grind the pistachios very finely in a mixer and set aside 3 tbsp. Beat the egg whites with lemon juice until stiff, gradually adding powdered sugar. Continue beating until a firm, glossy batter forms, then gently fold in the pistachios and tint with a few drops of green food coloring. Fill a piping bag with a large round tip and pipe even meringue dots onto the tray. Bake for 10-12 minutes so they are crisp on the outside and still soft inside. Remove from oven, take off the tray, and cool.

For the filling, beat butter with powdered sugar until fluffy, then gradually mix in cream cheese and matcha powder. Fill a piping bag with a small star tip and pipe half of the macarons on their flat side. Cover with a matching piece, press lightly, and serve.
