A quick and healthy glass noodle salad from Spoonsparrow – perfect for a post‑workout meal.

Ingredients

  • 2 Garlic cloves
  • 1 piece fresh ginger (about 3 cm)
  • 1 bunch coriander leaves
  • 400 g ground beef
  • Salt
  • 1 tsp Sambal oelek
  • 4 tbsp light soy sauce (≈60 ml)
  • 200 g glass noodles
  • 1 bunch spring onions
  • 200 g Cherry tomatoes
  • 2 large red chilies
  • 1 tsp coconut palm sugar
  • Salt
  • 4 Tbsp lime juice
  • 1 tsp Sesame oil
  • 4 tbsp sunflower oil (≈40 g)

    Combine noodles, dressing, spring onions, tomatoes, coriander, and meatballs in a bowl. Season with salt and cover for at least an hour, preferably longer, to meld flavors.
