Ingredients

  • 1 kg cauliflower (about 2 small heads)
  • 1 onion
  • 1 tbsp Sunflower oil
  • 150 ml Vegetable broth
  • 250 ml Whipping Cream
  • 2 Eggs
  • Salt
  • Pepper (freshly ground)
  • freshly grated nutmeg
  • 150 g shredded Bergkäse

    Preheat the oven to 180°C fan-forced.

    Clean, wash and cut the cauliflower into florets. Peel and finely dice the onion, then sauté in oil until translucent in a heatproof pan. Add the cauliflower, pour over vegetable broth, and bake for 15 minutes. Whisk together cream and eggs, season with salt, pepper, and nutmeg. Pour over the cauliflower and bake for another 10 minutes. Sprinkle shredded cheese on top and bake for an additional 10 minutes.
