Romanasalat with Vegetables

Crispy fresh salad enjoyment in spring!

Ingredients

  • 300 g cucumber
  • 300 g thick beans (fresh or frozen)
  • 150 g Romaine lettuce
  • 2 Spring Onions
  • 4 marinated artichoke hearts
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 tbsp chopped parsley
  • Salt
  • pepper (ground)

Instructions

    Peel the cucumber and slice into rounds.

    Wash the beans and blanch in heavily salted water for about 4 minutes, then drain, shock in ice water immediately, and let drain.

    Wash, trim, and dry the lettuce, then cut into strips.

  4. 4.

    Wash, trim the spring onions and cut diagonally into wide rings.

  5. 5.

    Halve or quarter the artichokes lengthwise.

    Whisk vinegar with salt, pepper, and oil; combine with salad ingredients and sprinkle with parsley before serving.
