Greek Salad with Grilled Chicken

Ingredients
- 1 cucumber
- 4 tomatoes
- 2 red onions
- 1 red bell pepper
- 0.5 romaine lettuce
- 150 g black olives
- 220 g mild sheep cheese
- 3 tbsp wine vinegar
- 6 tbsp Olive oil
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
- 400 g chicken breast fillet
- 3 tbsp Lemon juice
- 2 tbsp olive oil (for cooking)
- basil (for garnish)

Wash the cucumber, dry and grate it, then slice with skin on. Wash tomatoes and cut into wedges. Peel onions and cut into wedges. Clean romaine lettuce, wash and tear into bite-sized pieces. Wash pepper, trim and cut into strips.

Whisk vinegar with oil, sugar, salt, and pepper to make a dressing. Arrange romaine in the center of a salad plate and drizzle half the dressing over it. Combine remaining salad ingredients, mix with the rest of the dressing, and place on top of the lettuce.

Pat chicken fillet pieces dry. Season with salt and pepper, then cook each side for about 4 minutes in hot oil in a grill pan. Distribute chicken over the salad. Drizzle lemon juice, crumble sheep cheese on top, garnish with basil, and serve.
