Roasted Red Beets with Cheese Sticks

- 500 g red beet
- 6 cloves garlic
- 3 cm fresh ginger
- 1 tbsp orange zest
- 125 ml orange juice
- 50 g Brown sugar
- 4 tbsp olive oil
- Salt
- ground pepper
- 1 clove garlic
- 100 g pine nuts
- 0.25 bunch Parsley
- 1 untreated lemon (zest)
- 5 tbsp olive oil
- 250 g halloumi
- 20 g butter
- 3 tbsp dukkah mix (nut spice blend)
- 2 tbsp watercress

Peel the red beet and cut into strips. Peel and finely chop the garlic and ginger. Preheat oven to 200°C fan-forced. Mix the beet with garlic, ginger, orange zest and juice, olive oil, and brown sugar; season with salt and pepper. Spread on a baking tray and roast for 35-40 minutes.

Meanwhile, peel the remaining garlic and roughly chop the pine nuts. Wash and dry the parsley, then finely chop the leaves. Mix together with lemon zest and olive oil, then combine with the pine nuts. Slice the halloumi into 2 cm wide strips and brown in a hot pan with melted butter on all sides.

Remove the cheese sticks from the pan and press them into the pine nut mixture. Take the roasted beet out of the oven and sprinkle with dukkah mix. Plate the beet with the cheese sticks and garnish with watercress before serving.
