Stuffed Artichokes with Mozzarella

Ingredients
- 8 artichokes
- 1 untreated lemon
- Salt
- 4 balls mozzarella (125 g each)
- 3 eggs
- 200 g breadcrumbs
- butter (for the dish)
- 100 g freshly grated Parmesan

Preheat oven to 200°C (400°F) with upper and lower heat. Wash the artichokes, break off the stem with the lower small leaves. Remove the outer leaves. Trim the leaf tips with kitchen scissors. Halve the lemon and rub all cut surfaces. Place the vegetables in a large pot of salted water with the leaf tips up, add a slice of lemon, and simmer for about 20 minutes. Remove, drain, and scrape out the husk with a spoon.

Preheat oven to 200°C (400°F) with upper and lower heat. For the filling grate the mozzarella finely and mix it with the eggs and breadcrumbs. Place the artichokes in a buttered baking dish, fill them with the mozzarella mixture, sprinkle with parmesan, and bake in the preheated oven for 20-25 minutes. Remove and serve immediately.
