Onion with Minced Filling

Ingredients
- 6 onions (red and white)
- Salt
- 1 egg
- 2 tbsp freshly chopped parsley
- 80 g grated cheese (e.g., Emmental)
- 400 g minced meat (veal)
- black pepper (freshly ground)
- olive oil (for greasing the pan)
- 4 tomatoes
- 1 Tbsp freshly chopped thyme
- 1 tbsp Tomato Paste
- a pinch of chili flakes
- 120 ml dry white wine
- thyme (for garnish)
Instructions

Peel the onions and cook them in salted water for about 10 minutes. Remove and drain. Cut off a lid from each onion and carefully hollow out the center with a teaspoon. Finely chop the hollowed-out onion flesh and the lids. Set aside 2-3 tbsp, mix with the egg, parsley, half of the cheese, and the minced meat; knead well and season with salt and pepper.

Preheat the oven to 180°C fan-forced.

Fill the onions with the minced mixture and place them in a greased baking dish. Wash the tomatoes, quarter them, remove seeds, and dice. Stir together the remaining onion flesh, thyme, tomato paste, chili flakes, and white wine. Season with salt and pepper, spread around and over the onions, sprinkle with the remaining cheese, and bake for about 40 minutes until golden brown.
