Roasted parsnips: Easy to prepare and a fall delight that brings the season’s flavors to life. The dish is brightened with lemon zest and thyme for a fresh finish.
Ingredients
- 800 g parsnips
- 3 tbsp Olive oil (30 ml)
- 1 tbsp Lemon Juice
- 1 tsp lemon thyme leaves
- Salt
- Pepper (freshly ground)
- 1 tsp liquid honey

Preheat the oven to 200°C fan‑forced or 180°C for convection, gas: level 2–3.

Peel, clean and halve the parsnips lengthwise. Toss with olive oil, lemon juice, thyme, salt, pepper and honey, then spread evenly on a baking tray. Roast in the oven for about 30 minutes, turning occasionally.
