Ingredients

  • 2 onions
  • 400 g parsnips
  • 600 g Red Beet
  • 1 tbsp plant oil
  • Salt
  • Pepper
  • 250 ml vegetable broth
  • 1 tbsp Apple cider vinegar
  • ground cumin

Instructions

    Peel onions, parsnips and red beet. Cut onions into wedges, parsnips and red beet into slices and chunks. In a pot, briefly sauté everything in hot oil over medium heat. Season with salt and pepper and deglaze with broth.

    Add vinegar and cook covered for about 20 minutes, stirring occasionally. Add more broth if needed. Taste the red beet vegetable with salt, pepper and cumin before serving.
