Cod in the Oven with Olive Oil

The cod baked with olive oil from Spoonsparrow is perfect for all low‑carb fans and tastes wonderfully aromatic.
Ingredients
- 4 cod fillets (200 g each)
- 3 tbsp olive oil (+1 tsp for the pan)
- 1 Organic lemon
- 2 tsp coarse mustard
- 2 sprigs Basil
- Salt
- Pepper
Instructions

Pat fish fillets dry with paper towels. Brush an oven‑proof skillet or baking dish with 1 tsp oil and arrange the fillets side by side.

Peel the lemon, shave its zest into thin strips, then squeeze out the juice. Mix the zest with 3 tbsp lemon juice, olive oil, and mustard in a bowl.

Wash basil, pat dry, set aside a few leaves for garnish; finely slice the rest and stir into the dressing.

Pour the mixture over the fillets, season with salt and pepper, cover, and bake in a preheated oven at 200 °C (180 °C fan‑forced) for about 15 minutes. Garnish with the reserved basil before serving.
