Roasted Chicken with Pine Nuts and Figs

Ingredients

  • 1 chicken (ca. 1,2 kg)
  • 200 g shallots
  • 5 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 Garlic clove
  • 1 sprig rosemary
  • 2 stalks Parsley
  • 150 ml dry white wine
  • 8 figs
  • 40 g pine nuts
  • 1 tbsp honey

Instructions

    Preheat the oven to 180°C fan.

    Wash and pat the chicken dry. Peel and slice the shallots and garlic into rings. Place half of the shallots in a roasting tin. Drizzle with 3 tbsp oil, season with salt and pepper. Season the inside and outside of the chicken with salt and pepper, fill it with the remaining shallots, garlic and herbs, brush with 2 tbsp oil and lay on top of the shallots. Pour in the wine and roast for about 45 minutes. If needed, add a little water and baste the chicken occasionally with the roasting liquid.

    Wash the figs, cut them into wedges and place them with the pine nuts in the roasting tin. Brush the chicken with honey and cook everything for an additional 15-20 minutes until done. If necessary, increase the temperature slightly to brown the skin.
