  • 1 chicken (about 1.2 kg)
  • 2 untreated oranges
  • 2 Garlic cloves
  • 1 handful rosemary
  • 1 dried pepperoni
  • Salt
  • 2 tbsp olive oil
  • black pepper (from grinder)

    Preheat the oven to 220°C with upper and lower heat. Wash the chicken, pat dry, and cut into 6-8 pieces. Rinse oranges hot, dry them, and cut one orange into wedges. From the second orange, thinly peel the zest without the white pith. Squeeze out the juice. Peel the garlic. Set aside half the rosemary sprigs; strip needles from the rest. Finely chop the rosemary needles, orange zest, garlic, and pepperoni together. Mix in about 1 tsp salt and rub it into the chicken pieces. Place them in an oiled baking dish and pour the orange juice over them. Insert orange slices between the chicken pieces and drizzle everything with olive oil. Season with black pepper and bake for about 35 minutes (longer if the pieces are thicker). Serve garnished with fresh rosemary.
