Roasted Chicken in Salami Wrap

Ingredients

  • 1 roasted chicken
  • 1 EL olive oil
  • 0.5 TL rosemary
  • 2 EL lemon juice
  • 10 slices garlic salami
  • 4 EL black olives
  • 1 untreated lemon
  • 2 sprigs Rosemary
  • Salt
  • Pepper

Instructions

    Clean the chicken, pat dry, rub inside and out with salt and pepper. Brush with rosemary and lemon juice.

    Spread the salami over the chicken and tie securely with kitchen twine. Grease a fireproof dish with olive oil and roast the chicken at 175°C for 1½ hours.

    Add the olives 15 minutes before the end of cooking. Slice the lemon, arrange on a platter with rosemary sprigs and serve alongside the chicken.
