Braised Chicken in White Wine Sauce

Ingredients

  • 1 whole roasted chicken (pre-cooked, about 1.4 kg)
  • Salt
  • Pepper (freshly ground)
  • 200 g Cherry tomatoes
  • 4 tbsp pitted black olives
  • 1 sprig rosemary
  • 2 sprigs thyme
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 100 ml dry white wine
  • 100 ml poultry stock
  • 75 ml heavy cream (at least 30% fat)

Instructions

    Wash the chicken, cut into eight pieces and season with salt and pepper. Wash the tomatoes and drain the olives. Shake rosemary and thyme dry, finely chop leaves or needles. Peel garlic cloves and press them.

    Heat oil in a pan and brown chicken pieces all around. Add olives, garlic, herbs, and tomatoes; sauté briefly. Deglaze with wine, stock, and cream. Season with salt and pepper, then simmer covered on medium heat for 20-25 minutes.

    Preheat the oven grill. Remove the lid and place the pan under the preheated grill for about 5 minutes. Serve immediately.
