Ingredients

  • 1 large cauliflower (cut into small florets)
  • 2 tbsp butter
  • 3 tbsp sunflower oil
  • 100 g cashews
  • 2 shallots (peeled and chopped)
  • 1 tsp mustard seeds
  • 1 red chili pepper (deveined and finely chopped)
  • Salt
  • Pepper (freshly ground)

    Blanch cauliflower florets in boiling salted water for 2 minutes, then drain and set aside.

    Heat butter and oil in a large pan and toast the cashews until golden; remove and drain on paper towels.

    Add shallots, garlic, mustard seeds, and chili to the pan and sauté for a few minutes, then add cauliflower and cook slowly for about 10 minutes, stirring occasionally. Season with salt and pepper and serve hot.
