- 400 g sweet potatoes
- Salt
- Pepper (freshly ground)
- 4 sprigs thyme
- 2 tbsp olive oil
- 2 tbsp mayonnaise
- 2 tbsp creamy horseradish
- 1 tbsp grainy mustard
- 12 slices roastbeef
- 2 tsp pink peppercorns
- chives for garnish

Preheat the oven to 200°C with fan and top heat.

Wash the sweet potatoes thoroughly, trim the ends, and slice them about 1 cm thick. Arrange on a baking sheet lined with parchment paper, season with salt and pepper, sprinkle with thyme, drizzle with olive oil, and bake for about 20 minutes until golden brown.

Whisk together mayonnaise, creamy horseradish, and mustard; season with salt and pepper to taste.

Remove the sweet potatoes from the oven and place on a platter. Fold each slice of roastbeef to fit and lay it atop a potato slice. Serve garnished with a dollop of horseradish cream, pink peppercorns, and chives.
