Chicken in Curry Pea Sauce

Ingredients
- 4 chicken breast fillets (about 120 g each)
- 1 Garlic clove
- 1 tsp fresh grated ginger
- 2 tbsp Vegetable oil
- 1 tbsp curry powder
- 300 ml poultry broth
- 200 ml coconut milk
- 150 g peas
- Salt
- Cayenne pepper
Instructions

Rinse the chicken breasts, pat dry and cut into large cubes. Peel and finely chop the garlic. Together with the ginger and chicken cubes, brown in hot oil until golden. Stir in curry powder and deglaze with broth. Add coconut milk and let the curry simmer gently for about 10 minutes; add more broth if needed.

Add the peas and cook for another ~5 minutes until tender.

Season with salt and cayenne pepper, then serve.
