Ingredients

  • 2 kg lamb leg (approx. 1.8 - 1 lamb leg)
  • 6 Garlic cloves
  • 25 g dried apricots
  • 2 tbsp olive oil
  • 1 kg potatoes
  • 2 large onions
  • Salt
  • black pepper (ground)
  • fresh apricots (for garnish)
  • fresh mint (for garnish)

Instructions

    Peel two garlic cloves and slice finely into sticks. Slice the dried apricots into fine sticks as well and mix with the garlic. Make small incisions in the lamb leg with a sharp knife and insert the sticks into them. Place the lamb leg in a roasting pan, brush with olive oil, and roast in a preheated oven at 200°C for about 40 minutes.

    Meanwhile peel potatoes and cut them into larger cubes. Peel onions and roughly chop them as well. Peel the remaining garlic and coarsely chop it.

    After 40 minutes remove the lamb leg from the roasting pan, add potatoes, onions, and garlic, season with salt and pepper, then place the lamb leg on top. Roast everything for another hour until the lamb is cooked through, turning the vegetables occasionally.

    For serving arrange the vegetables and lamb on a plate and garnish with apricots and mint leaves.
