Ingredients

  • 500 g beef tenderloin
  • 500 g mushrooms
  • 6 tarragon sprigs
  • 60 g Butter
  • 20 g crème fraîche
  • 1 tsp chili flakes
  • 0.5 l white wine
  • Sea salt

    Cut the beef tenderloin into strips and season with chili. Wash the tarragon, shake dry, finely chop two sprigs. Rub mushrooms with a kitchen towel, slice them. Mix crème fraîche with some tarragon and salt, serve in small dipping bowls.

    Sauté the mushrooms in half the butter in a pan. Meanwhile, in another pan sear the beef strips quickly over high heat on all sides using the remaining butter, deglaze with wine, remove from heat and let rest briefly before arranging and serving.
