- 2 green bell peppers
- 2 carrots
- 80 g enoki mushrooms
- 50 g yogurt
- 2 tbsp mayonnaise
- 2 tbsp crème fraîche
- 1 tbsp sharp mustard
- Salt
- Pepper (freshly ground)
- 12 slices cold roast beef

Wash the bell peppers, halve them, trim and cut into thin strips. Peel the carrots and slice or julienne into fine sticks. Wash the mushrooms and drain.

Whisk the yogurt with mayonnaise, crème fraîche, and mustard; season with salt and pepper. Spread this mixture on the roast beef slices, top with the vegetables, roll up, and serve.
