Steak Strips in Rice Paper Wrapper

Ingredients
- 4 beef steaks about 150 g each (e.g., sirloin)
- 1 tsp Sichuan peppercorns (crushed in mortar)
- Salt
- 2 tbsp peanut oil
- 80 g enoki mushrooms
- 3 stems Thai basil
- 4 rice paper sheets (Ø 22 cm)
Instructions

Rinse the meat, pat dry and season with Sichuan peppercorns and salt. Brown on both sides in a hot pan with oil. Reduce heat and cook about 5 minutes until pink.

Clean the mushrooms. Rinse the Thai basil, pluck leaves and shake dry.

Fill a shallow bowl slightly larger than the rice paper sheets with water. Place a kitchen towel beside it and set a second towel ready. Dip each sheet individually into the water for about 1 minute to soften. Then lay them gently on the first towel and pat dry with the second towel.

Slice the steaks into narrow strips.

Cut the softened rice paper in half and place prepared ingredients in the center of each piece. Roll up and serve with dipping sauces as desired.
