Rice Soup

Ingredients

  • 800 ml chicken broth
  • 125 g rice
  • 1 bunch parsley
  • 1 lemon
  • 2 Eggs
  • Salt
  • Pepper
  • 1 tsp ground allspice

Instructions

    Add the rice to about twice the amount of boiling salted water and simmer on low heat for approximately 20 minutes until tender. Meanwhile, wash the parsley, dry it, and finely chop the leaves. Wash the lemon, zest it, and pull a few strips from the peel. Set aside the zest for garnish. Halve the lemon, squeeze out the juice, and whisk the juice with the eggs in a bowl. Bring the chicken broth to a boil.

    Stir about 200 ml of the hot soup into the egg mixture. Slowly pour the mixture back into the pot, stirring well, and do not let the soup boil again so the eggs do not curdle. Season with salt, pepper, and allspice, serve in bowls, add the rice, and sprinkle parsley on top. Garnish with the reserved lemon zest.
