Goulash Soup with Sour Cream and Bread

Ingredients

  • 400 g beef (shoulder)
  • 2 onions
  • 3 Garlic cloves
  • 3 tbsp sunflower oil
  • 2 tbsp Tomato paste
  • 200 ml dry red wine
  • 1 l meat broth
  • 1 bay leaf
  • 1 tsp grated lemon zest
  • 0.5 tsp ground caraway
  • 0.5 tsp dried marjoram
  • Salt
  • pepper (ground)
  • 2 tsp sweet paprika powder
  • 150 g sour cream (10% fat)
  • fresh bread (for serving)

Instructions

    Wash the beef, pat dry and cut into 2 cm cubes. Peel and finely chop the onions and garlic. Heat the oil in a large pot and brown the meat on all sides for 2 minutes. Add the onions and garlic and cook 2-3 minutes more. Stir in the tomato paste, let it color briefly, then deglaze with red wine. Pour in the broth, add the bay leaf, lemon zest, caraway, and marjoram, season with salt and pepper. Cover and simmer on low heat for 1½ hours, adding more broth if needed. Stir in the paprika powder and adjust seasoning. Ladle into bowls, garnish with sour cream, and grind fresh pepper over.
