Potato Chicken Soup with Curry

Ingredients
- 1 chicken
- 500 g waxy potatoes
- 2 carrots
- 2 onions
- 1 Garlic clove
- 2 tbsp sunflower oil
- 2 tbsp Curry Powder
- 800 ml chicken broth
- Salt
- ground pepper
- Cayenne pepper
- 4 tbsp Yogurt
- 1 tbsp freshly chopped mint
Instructions

Wash the chicken, pat dry, debone and skin it. Cut into cubes.

Peel the potatoes, carrots, onions and garlic. Roughly chop the potatoes and carrots; dice the onion and mince the garlic.

Brown the meat in hot oil on all sides, then add the potatoes, carrots, onions and garlic, sauté 2-3 minutes, stir in curry powder, cook briefly, deglaze with broth. Season with salt and pepper, cover and simmer gently for about 45 minutes, stirring occasionally.

Season with salt, pepper and cayenne pepper, ladle into bowls, top each with a dollop of yogurt and sprinkle mint before serving.
