Rice Salad with Tuna and Tomatoes

Ingredients

  • 200 g rice
  • Salt
  • 5 tomatoes
  • 2 red bell peppers
  • 3 sprigs curly parsley
  • 2 tbsp white balsamic vinegar
  • 2 lemon juices
  • 40 ml mild olive oil
  • 2 pinch sugar
  • pepper (ground)
  • 200 g tuna (canned, natural)

Instructions

    Cook the rice according to package instructions in salted water, drain into a colander, rinse with cold water and let it dry well.

    Wash and finely chop the tomatoes. Wash, trim and dice the bell peppers. Wash, shake dry and finely chop the parsley.

    Mix rice, tomatoes and peppers with vinegar, lemon juice and oil; season with sugar, salt and pepper.

    Drain the tuna in a sieve, break into large flakes and gently fold into the salad. Serve the salad in bowls and sprinkle with parsley.
