Ingredients
- 200 g long‑grain rice
- Sea salt
- 200 g Cherry tomatoes
- 50 g black olives (pitted)
- 2 Spring Onions
- 1 cucumber
- 200 g sheep cheese (9% fat)
- 4 tbsp Lemon juice
- 1 tsp Honey
- 6 tbsp olive oil (60 ml)
- black pepper
Instructions

Cook the rice according to package instructions in a pot of boiling salted water and let it cool.

Meanwhile, wash and halve the tomatoes. Roughly chop the olives. Wash, trim, and slice the spring onions into rings. Wash the cucumber, cut lengthwise, deseed, and dice. Crumble the sheep cheese and combine all prepared ingredients in a bowl.

Add lemon juice, honey, and olive oil; gently mix everything together. Season the Greek rice salad with salt and pepper to taste and serve.
